Charred Eggplant Mint Flatbread Bites

Warm flatbread pieces topped with smoky eggplant, tahini drizzle, lemon, and mint.

Ingredients

  • 2 small eggplants
  • 2 flatbreads
  • 2 tablespoons tahini
  • 1 lemon, juiced
  • 1 garlic clove, grated
  • 1/2 cup fresh mint leaves
  • Olive oil, salt, and pepper

Method

  1. Broil or grill eggplants until collapsed and smoky.
  2. Scoop flesh into a bowl and season with salt, pepper, olive oil, and lemon.
  3. Warm flatbreads and cut into small pieces.
  4. Spoon eggplant over each piece.
  5. Drizzle with tahini mixed with lemon, garlic, and water, then scatter mint on top.

Mint cuts through smoky eggplant best when added as whole small leaves at the end.
