Chickpea Mint Lettuce Cups

Crunchy lettuce cups filled with chickpeas, cucumber, tomato, feta, lemon, and mint.

Ingredients

  • 1 can chickpeas, drained
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, chopped
  • 1/2 cup crumbled feta
  • 1/2 cup chopped fresh mint
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 12 butter lettuce leaves
  • Salt and pepper

Method

  1. Mash a quarter of the chickpeas in a bowl.
  2. Fold in remaining chickpeas, cucumber, tomatoes, feta, mint, lemon juice, olive oil, salt, and pepper.
  3. Taste and adjust lemon and salt.
  4. Spoon into lettuce leaves.
  5. Serve chilled or at room temperature.

Fresh Mint Tip

Use tender lettuce and tender mint leaves so each cup stays easy to bite.
