Corn Fritters with Mint Lime Crema

Sweet corn fritters with scallions, chile, and a tangy fresh mint lime crema.

Ingredients

  • 2 cups corn kernels
  • 2 scallions, sliced
  • 1 egg
  • 1/2 cup flour
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • 1 cup sour cream
  • 1/2 cup minced fresh mint
  • 1 lime, zested and juiced
  • Oil, salt, and chile flakes

Method

  1. Mix corn, scallions, egg, flour, milk, baking powder, salt, and chile flakes.
  2. Pan-fry small fritters in oil until golden and crisp.
  3. Stir sour cream with mint, lime zest, lime juice, and salt.
  4. Drain fritters briefly on a rack.
  5. Serve warm with mint lime crema.
