Crispy Cauliflower Mint Tahini Bites

Roasted cauliflower florets with lemon tahini, toasted sesame, and torn mint.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/3 cup tahini
  • 1 lemon, juiced
  • 1 small garlic clove, grated
  • 1/2 cup fresh mint leaves
  • Toasted sesame seeds, salt, and pepper

Method

  1. Toss cauliflower with olive oil, cumin, salt, and pepper.
  2. Roast at 425 F until browned and crisp at the edges.
  3. Whisk tahini with lemon juice, garlic, salt, and water until pourable.
  4. Arrange cauliflower on a platter.
  5. Drizzle with tahini and top with mint and sesame seeds.

Fresh Mint Tip

Scatter mint after the tahini so some leaves stick to the sauce and some stay crisp.
