Cucumber Mint Gazpacho Shooters

Cold cucumber yogurt shooters with lime, jalapeno, olive oil, and fresh mint.

Ingredients

  • 2 cucumbers, chopped
  • 1 cup plain yogurt
  • 1/2 cup fresh mint leaves
  • 1 lime, juiced
  • 1 small jalapeno, seeded
  • 2 tablespoons olive oil
  • Salt and pepper
  • Tiny cucumber dice for garnish

Method

  1. Blend cucumbers, yogurt, mint, lime juice, jalapeno, olive oil, salt, and pepper until smooth.
  2. Chill for at least 30 minutes.
  3. Taste and adjust salt and lime.
  4. Pour into small glasses.
  5. Garnish with cucumber dice and tiny mint leaves.

Fresh Mint Tip

Chill before tasting; cold dulls salt but sharpens the mint-cucumber freshness.
