Feta Mint Stuffed Mini Peppers

Crunchy mini peppers filled with creamy feta, olives, lemon, and plenty of fresh mint.

Ingredients

  • 12 mini sweet peppers
  • 8 ounces feta, crumbled
  • 1/4 cup Greek yogurt
  • 1/3 cup chopped fresh mint
  • 1/4 cup chopped green olives
  • 1 teaspoon lemon zest
  • Olive oil and black pepper

Method

  1. Halve the peppers lengthwise and remove seeds.
  2. Mash feta with yogurt until spoonable.
  3. Fold in mint, olives, lemon zest, and pepper.
  4. Fill each pepper half with the feta mixture.
  5. Drizzle lightly with olive oil before serving.

Fresh Mint Tip

Stir mint in last so it stays in visible green flecks throughout the filling.
