Garden Pea Mint Crostini

Crushed peas, ricotta, lemon, and mint piled onto crisp toast.

Ingredients

  • 1 baguette, sliced
  • 1 1/2 cups peas
  • 3/4 cup ricotta
  • 1/3 cup chopped mint
  • 1 lemon, zested and juiced
  • Olive oil, salt, and pepper

Method

  1. Brush baguette slices with olive oil and toast until crisp.
  2. Mash peas roughly with lemon juice, salt, pepper, and olive oil.
  3. Fold mint into the peas.
  4. Spread ricotta on each toast and spoon peas over the top.
  5. Finish with lemon zest and extra mint.

Fresh Mint Tip

Do not puree the mint with the peas; folding it in keeps the flavor brighter.
