Grilled Apricot Mint Burrata Crostini

Charred apricot wedges and creamy burrata on toast with pistachios, chile, and mint.

Ingredients

  • 1 baguette, sliced
  • 4 apricots, halved
  • 8 ounces burrata
  • 1/4 cup chopped pistachios
  • 1/3 cup fresh mint leaves
  • Pinch of chile flakes
  • Olive oil, salt, and black pepper

Method

  1. Toast baguette slices with olive oil.
  2. Grill or sear apricots cut-side down until marked.
  3. Tear burrata over the toasts.
  4. Add apricot wedges.
  5. Finish with pistachios, chile, mint, salt, pepper, and olive oil.

Fresh Mint Tip

Add mint at the very end so it smells fresh against the warm apricot.
