Grilled Shrimp Mint Chermoula Skewers

Quick shrimp skewers with a lemony cilantro mint chermoula and warm spices.

Ingredients

  • 1 1/2 pounds large shrimp, peeled
  • 1/2 cup cilantro, chopped
  • 1/2 cup fresh mint, chopped
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/3 cup olive oil
  • Salt and skewers

Method

  1. Thread shrimp onto skewers and season with salt.
  2. Stir cilantro, mint, garlic, lemon juice, paprika, cumin, and olive oil into chermoula.
  3. Brush shrimp with a little chermoula.
  4. Grill or broil until pink and lightly charred.
  5. Spoon more mint chermoula over the hot skewers.

Fresh Mint Tip

Reserve some chermoula for after cooking so the mint tastes fresh instead of grilled.
