Mint Chimichurri Steak Skewers

Seared steak bites on skewers with a punchy parsley mint chimichurri.

Ingredients

  • 1 pound sirloin or strip steak, cubed
  • 1/2 cup chopped parsley
  • 1/2 cup chopped fresh mint
  • 1 garlic clove, minced
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • Salt, pepper, and short skewers

Method

  1. Season steak cubes with salt, pepper, and a little olive oil.
  2. Thread onto short skewers.
  3. Stir parsley, mint, garlic, vinegar, olive oil, and salt into chimichurri.
  4. Sear or grill skewers until browned outside and rosy inside.
  5. Spoon chimichurri over the hot skewers.

Fresh Mint Tip

Use equal parts parsley and mint so the sauce tastes savory, not sweet.
