Mint Pesto Mozzarella Toasts

Crisp toasts with creamy mozzarella, fresh mint pesto, lemon, and toasted almonds.

Ingredients

  • 1 baguette, sliced
  • 8 ounces fresh mozzarella, sliced
  • 1 cup fresh mint leaves
  • 1/2 cup parsley leaves
  • 1/4 cup toasted almonds
  • 1 lemon, zested and juiced
  • 1/3 cup olive oil
  • Salt and pepper

Method

  1. Toast baguette slices until crisp.
  2. Pulse mint, parsley, almonds, lemon zest, lemon juice, olive oil, salt, and pepper into pesto.
  3. Top each toast with mozzarella.
  4. Spoon mint pesto over the cheese.
  5. Finish with extra almonds if desired.

Fresh Mint Tip

Do not over-blend the pesto; a slightly coarse texture keeps the mint aromatic.
