Minted Edamame Feta Dip

A bright green edamame dip with feta, lemon, garlic, olive oil, and fresh mint.

Ingredients

  • 2 cups shelled edamame, thawed
  • 4 ounces feta
  • 1/2 cup fresh mint leaves
  • 1 lemon, zested and juiced
  • 1 small garlic clove
  • 1/4 cup olive oil
  • Salt, pepper, and pita chips

Method

  1. Pulse edamame, feta, mint, lemon zest, lemon juice, garlic, and olive oil.
  2. Add a splash of water if needed to loosen.
  3. Season with salt and pepper.
  4. Spoon into a shallow bowl.
  5. Serve with pita chips or vegetables.

Fresh Mint Tip

Pulse instead of blending continuously so flecks of mint stay visible.
