Mushroom Mint Walnut Phyllo Triangles

Buttery phyllo triangles stuffed with mushrooms, walnuts, feta, and fresh mint.

Ingredients

  • 8 ounces mushrooms, finely chopped
  • 1 shallot, minced
  • 1/3 cup toasted walnuts, chopped
  • 1/2 cup crumbled feta
  • 1/3 cup chopped fresh mint
  • 8 sheets phyllo
  • 4 tablespoons melted butter or olive oil
  • Salt and pepper

Method

  1. Cook mushrooms and shallot until the pan is dry and the mushrooms are browned.
  2. Cool, then stir in walnuts, feta, mint, salt, and pepper.
  3. Cut phyllo into strips and brush lightly with butter.
  4. Fold spoonfuls of filling into triangles.
  5. Bake at 375 F until golden and crisp.

Fresh Mint Tip

Add mint only after the mushrooms cool so it lifts the earthy filling instead of disappearing.
