Potato Pea Mint Samosa Bites

Crisp little samosa bites with spiced potato, peas, cilantro, and fresh mint.

Ingredients

  • 2 cups cooked potatoes, mashed roughly
  • 1 cup peas
  • 2 scallions, sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/3 cup chopped fresh mint
  • 1/3 cup chopped cilantro
  • Wonton wrappers or pastry squares
  • Oil and salt

Method

  1. Toast cumin seeds in a little oil, then add potatoes, peas, scallions, garam masala, and salt.
  2. Cool the filling and fold in mint and cilantro.
  3. Spoon filling into wrappers and seal into small triangles.
  4. Brush with oil or fry until crisp.
  5. Serve hot with chutney or yogurt.

Fresh Mint Tip

Stir herbs into the filling after it cools so mint keeps its garden-fresh edge.
