- 3 carrots, chopped
- 1 can chickpeas, drained
- 2 tablespoons tahini
- 1 lemon, juiced
- 1 garlic clove
- 1 baguette, sliced
- 1/3 cup fresh mint leaves
- Toasted sesame or pumpkin seeds
- Olive oil, salt, and cumin

Appetizer
Toasty crostini spread with roasted carrot hummus and finished with mint and seeds.
Use mint as a final topping instead of blending it into the hummus, where the carrot can dull it.
