Roasted Grape Feta Mint Crostini

Jammy roasted grapes over whipped feta with walnuts, thyme, and torn fresh mint.

Ingredients

  • 2 cups seedless grapes
  • 1 teaspoon thyme leaves
  • 1 baguette, sliced
  • 6 ounces feta
  • 1/4 cup Greek yogurt
  • 1/4 cup toasted walnuts
  • 1/3 cup fresh mint leaves
  • Olive oil and black pepper

Method

  1. Roast grapes with olive oil, thyme, and pepper until softened and glossy.
  2. Toast baguette slices.
  3. Whip feta with yogurt until creamy.
  4. Spread feta on toasts and top with roasted grapes.
  5. Finish with walnuts and torn mint.

Mint keeps the roasted grapes from tasting dessert-like; use it generously but add it last.
