Savory Mint Scallion Pancakes

Crisp-edged little pancakes with scallions, sesame, and fresh mint in the batter.

Ingredients

  • 1 cup flour
  • 3/4 cup cold water
  • 1 egg
  • 4 scallions, sliced
  • 1/2 cup thinly sliced fresh mint
  • 1 tablespoon sesame seeds
  • Soy sauce and rice vinegar for dipping
  • Oil and salt

Method

  1. Whisk flour, water, egg, and salt into a loose batter.
  2. Fold in scallions, mint, and sesame seeds.
  3. Pan-fry small pancakes in oil until crisp and golden.
  4. Drain briefly on a rack.
  5. Serve with soy sauce mixed with rice vinegar.

Slice mint finely so it spreads evenly through the batter and does not clump.
