Spiced Lentil Mint Patties

Tender lentil patties with warm spices and a lemon mint yogurt spooned on top.

Ingredients

  • 2 cups cooked brown or green lentils
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 cup yogurt
  • 1/2 cup chopped fresh mint
  • 1 lemon, juiced
  • Oil, salt, and pepper

Method

  1. Mash half the lentils in a bowl.
  2. Mix with remaining lentils, egg, breadcrumbs, cumin, coriander, salt, and pepper.
  3. Shape into small patties.
  4. Pan-fry until browned on both sides.
  5. Top with yogurt stirred with mint, lemon juice, and salt.

Fresh Mint Tip

A cool mint topping is the best contrast for warm cumin and coriander.
