Tofu Lettuce Cups with Mint Chili Crunch

Savory tofu and mushroom lettuce cups finished with lime, fresh mint, and chili crunch.

Ingredients

  • 14 ounces firm tofu, pressed and crumbled
  • 8 ounces mushrooms, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 12 butter lettuce leaves
  • 1 cup fresh mint leaves
  • Chili crunch and sliced scallions

Method

  1. Cook mushrooms in a hot skillet until browned.
  2. Add tofu, soy sauce, lime juice, and ginger; cook until savory and dry.
  3. Spoon tofu mixture into lettuce leaves.
  4. Tuck mint leaves into each cup.
  5. Top with scallions and chili crunch.
