Zucchini Fritters with Mint Yogurt

Golden zucchini fritters with scallions, feta, and a cool lemon mint yogurt.

Ingredients

  • 3 medium zucchini, grated
  • 2 scallions, sliced
  • 1/2 cup crumbled feta
  • 2 eggs
  • 1/2 cup flour
  • 1 cup Greek yogurt
  • 1/2 cup chopped fresh mint
  • 1 lemon, juiced
  • Salt, pepper, and olive oil

Method

  1. Salt grated zucchini for 10 minutes, then squeeze dry.
  2. Mix zucchini with scallions, feta, eggs, flour, and pepper.
  3. Pan-fry small spoonfuls in olive oil until crisp on both sides.
  4. Stir yogurt with mint, lemon juice, and salt.
  5. Serve fritters warm with mint yogurt.

Keep mint in the sauce rather than the batter so it stays vivid beside the hot fritters.
