Apple Mint Oat Crumble

Cinnamon apples bake under oats and butter, then get a surprising fresh mint finish with maple yogurt.

Ingredients

  • 6 apples, sliced
  • 1/3 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 cup rolled oats
  • 1/2 cup flour
  • 6 tablespoons butter
  • 1/3 cup walnuts
  • 1 cup Greek yogurt
  • 2 tablespoons maple syrup
  • 1/3 cup chopped fresh mint

Method

  1. Heat oven to 375 F.
  2. Toss apples with brown sugar, lemon juice, cinnamon, and cornstarch.
  3. Mix oats, flour, butter, and walnuts into a clumpy topping.
  4. Bake until the apples bubble and topping browns, 35 to 40 minutes.
  5. Serve with maple yogurt and chopped mint scattered over each bowl.
