Blackberry Mint Cobbler

Jammy blackberries bake under a golden biscuit crust, with mint added after baking for a fresh lift.

Ingredients

  • 5 cups blackberries
  • 2/3 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter
  • 2/3 cup buttermilk
  • 1/3 cup chopped fresh mint

Method

  1. Heat oven to 375 F.
  2. Toss blackberries with sugar, cornstarch, lemon juice, and lemon zest in a baking dish.
  3. Rub butter into flour, baking powder, and salt, then stir in buttermilk to make a soft dough.
  4. Drop spoonfuls of dough over the berries and bake until bubbling and golden, about 35 minutes.
  5. Rest 10 minutes, then tuck chopped mint into the berry juices around the biscuits.

Stir mint into the fruit juices at the edge of the dish where it can warm without fully cooking.
