Blueberry Mint Buckle

Blueberry coffee cake gets a fresh finish from mint and lemon sugar scattered over the warm crumb.

Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons butter
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 2 cups blueberries
  • 1/2 cup crumb topping
  • 1/4 cup fresh mint
  • 1 teaspoon lemon zest

Method

  1. Heat oven to 350 F and butter an 8-inch square pan.
  2. Whisk flour, baking powder, and salt.
  3. Cream butter and sugar, beat in egg, then alternate dry ingredients with milk.
  4. Fold in blueberries, spread in the pan, add crumb topping, and bake 40 to 45 minutes.
  5. Mince mint with lemon zest and a spoonful of sugar, then sprinkle over the warm buckle.

Let the buckle cool for 10 minutes before adding mint sugar so the leaves stay bright.
