Cherry Mint Black Pepper Crisp

Sweet cherries bake under an oat topping, then fresh mint and black pepper sharpen the juices.

Ingredients

  • 5 cups pitted cherries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 teaspoon black pepper
  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 6 tablespoons butter
  • 1/3 cup chopped fresh mint
  • Vanilla cream, for serving

Method

  1. Heat oven to 375 F.
  2. Toss cherries with sugar, lemon juice, cornstarch, and black pepper.
  3. Mix oats, flour, brown sugar, and butter into a crumbly topping.
  4. Bake until bubbling and golden, 35 to 40 minutes.
  5. Rest 10 minutes, then fold mint into the exposed cherry juices.
