Chocolate Mint Meringue Kisses

Light cocoa meringues sandwich a spoonful of cream folded with fresh mint and dark chocolate.

Ingredients

  • 3 egg whites
  • 3/4 cup sugar
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/3 cup finely chopped fresh mint
  • 1 ounce dark chocolate, shaved

Method

  1. Heat oven to 250 F and line two baking sheets.
  2. Beat egg whites and salt to soft peaks, gradually add sugar, and beat glossy.
  3. Fold in cocoa and pipe or spoon small mounds.
  4. Bake until dry and crisp, then cool completely.
  5. Whip cream with powdered sugar, fold in mint and chocolate, and sandwich between meringues.

Dry the mint leaves well before chopping so the whipped cream stays light.
