Chocolate Mint Rye Cake

Rye flour gives dark chocolate cake a savory depth, finished with fresh mint cream and salt.

Ingredients

  • 3/4 cup rye flour
  • 3/4 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup brown sugar
  • 1/2 cup oil
  • 1 cup buttermilk
  • 1 cup heavy cream
  • 1/3 cup chopped fresh mint
  • Flaky salt

Method

  1. Heat oven to 350 F and line an 8-inch cake pan.
  2. Whisk rye flour, all-purpose flour, cocoa, baking soda, and salt.
  3. Whisk eggs, brown sugar, oil, and buttermilk.
  4. Fold wet and dry ingredients together and bake until set.
