Dark Chocolate Mint Pots de Creme

Dense chocolate custards infused with fresh mint leaves, finished with cream and flaky salt.

Ingredients

  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 3/4 cup fresh mint leaves
  • 6 ounces dark chocolate, chopped
  • 4 egg yolks
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Pinch of salt
  • Whipped cream, for serving
  • Flaky sea salt

Method

  1. Warm cream, milk, and mint until steaming, then cover and steep 20 minutes.
  2. Strain the dairy and return it to the pan.
  3. Whisk yolks, sugar, vanilla, and salt, then slowly temper in the warm mint cream.
  4. Cook gently until slightly thickened and pour over chopped chocolate.
  5. Whisk smooth, divide among cups, chill, and serve with cream and flaky salt.

Fresh Mint Tip

Press the steeped mint gently in the strainer, but stop before squeezing out bitter green notes.
