- 1 1/4 cups heavy cream
- 1 cup fresh mint leaves
- 10 ounces dark chocolate, chopped
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon vanilla
- Pinch of salt
- Flaky salt
- Small mint leaves

Dessert
A crisp tart shell filled with fresh-mint chocolate ganache, olive oil, and flaky salt.
Do not chop mint for the cream; whole leaves strain out and leave the ganache smooth.
