Dark Chocolate Mint Tart

A crisp tart shell filled with fresh-mint chocolate ganache, olive oil, and flaky salt.

Ingredients

  • 1 baked 9-inch tart shell
  • 1 1/4 cups heavy cream
  • 1 cup fresh mint leaves
  • 10 ounces dark chocolate, chopped
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla
  • Pinch of salt
  • Flaky salt
  • Small mint leaves

Method

  1. Warm cream with mint until steaming, cover, and steep 20 minutes.
  2. Strain the cream and rewarm gently.
  3. Pour cream over chocolate, butter, olive oil, vanilla, and salt.
  4. Let stand 2 minutes, then whisk until glossy.
  5. Pour into tart shell, chill until set, and finish with flaky salt and mint leaves.

Fresh Mint Tip

Do not chop mint for the cream; whole leaves strain out and leave the ganache smooth.
