Grilled Pineapple with Mint Mascarpone

Charred pineapple wedges meet cool mascarpone whipped with lime, honey, and finely chopped fresh mint.

Ingredients

  • 1 ripe pineapple, peeled and cut into wedges
  • 1 tablespoon neutral oil
  • 1 tablespoon brown sugar
  • Pinch of salt
  • 3/4 cup mascarpone
  • 1/4 cup Greek yogurt
  • 1 tablespoon honey
  • Zest and juice of 1 lime
  • 1/4 cup finely chopped fresh mint
  • Toasted coconut flakes

Method

  1. Heat a grill or grill pan to medium-high.
  2. Brush pineapple with oil, brown sugar, and salt.
  3. Grill until marked and juicy, 2 to 3 minutes per side.
  4. Stir mascarpone with yogurt, honey, lime zest, lime juice, and chopped mint.
  5. Serve pineapple warm with mint mascarpone and toasted coconut.
