Ingredients
- 2 cups heavy cream
- 2/3 cup sugar
- Zest of 1 lemon
- 1/3 cup lemon juice
- Pinch of salt
- 2 cups blueberries
- 2 tablespoons honey
- 1/3 cup torn fresh mint
- Shortbread, for serving

Dessert
A simple cream custard set with lemon, chilled, and topped with blueberries tossed in mint.
Keep mint out of the hot cream; the blueberry topping is where it tastes freshest.
