Lemon Olive Oil Cake with Mint Strawberries

A tender lemon cake with grassy olive oil richness, juicy strawberries, and fresh mint folded in at the last minute.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup plain yogurt
  • Zest and juice of 1 lemon
  • 2 cups sliced strawberries
  • 1/3 cup torn fresh mint
  • Lightly whipped cream, for serving

Method

  1. Heat oven to 350 F and line an 8-inch cake pan with parchment.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Beat eggs and sugar until pale, then whisk in olive oil, yogurt, lemon zest, and lemon juice.
  4. Fold in dry ingredients, scrape into the pan, and bake until the center springs back, 35 to 40 minutes.
  5. Toss strawberries with mint and a spoonful of sugar just before serving over slices of cake with cream.

Fresh Mint Tip

Tear mint by hand into the berries so the edges bruise lightly and perfume the juices.
