Lemon Thyme Mint Pound Cake

Buttery lemon pound cake gets a bright topping of berries, fresh mint, and a whisper of thyme.

Ingredients

  • 1 loaf lemon pound cake
  • 3 cups mixed berries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon fresh thyme leaves
  • 1/2 cup torn fresh mint
  • 1 cup whipped cream
  • Pinch of salt

Method

  1. Slice the pound cake and toast the slices lightly if desired.
  2. Toss berries with sugar, lemon juice, lemon zest, thyme, and salt.
  3. Let the berries stand for 10 minutes to release their juices.
  4. Fold in torn mint just before serving.
  5. Spoon berries over cake slices and add whipped cream.

Fresh Mint Tip

Add the mint after the thyme has had time to season the berry juices so the mint stays distinct.
