Mango Mint Coriander Kulfi

Dense mango kulfi gets a subtle savory perfume from fresh mint and toasted coriander seed.

Ingredients

  • 2 cups whole milk
  • 1 cup evaporated milk
  • 1/2 cup sweetened condensed milk
  • 1 cup mango puree
  • 3/4 cup fresh mint leaves
  • 1 teaspoon toasted coriander seeds, lightly crushed
  • 1 teaspoon lime zest
  • 1/3 cup chopped pistachios
  • Pinch of salt

Method

  1. Simmer whole milk until slightly reduced.
  2. Stir in evaporated milk, condensed milk, coriander, and salt.
  3. Remove from heat, add mint, cover, and steep 12 minutes.
  4. Strain, then stir in mango puree, lime zest, and pistachios.
  5. Pour into molds and freeze until solid.

Fresh Mint Tip

Crush coriander seeds lightly, but leave mint whole so the base strains cleanly.
