Mint Basil Peach Shortcakes

Warm biscuits split around ripe peaches, lemony cream, and a fragrant mix of fresh mint and basil.

Ingredients

  • 6 tender biscuits or shortcakes
  • 5 ripe peaches, sliced
  • 2 tablespoons honey
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/3 cup torn fresh mint
  • 2 tablespoons torn basil
  • 1 cup heavy cream
  • 1/2 cup mascarpone
  • 1 tablespoon sugar
  • Pinch of salt

Method

  1. Toss peaches with honey, lemon zest, lemon juice, and salt.
  2. Let the peaches stand for 10 minutes, then fold in mint and basil.
  3. Whip cream, mascarpone, and sugar until soft peaks form.
  4. Split warm biscuits and spoon peaches and their juices over the bottoms.
  5. Add cream, cap with biscuit tops, and finish with a few small mint leaves.

Fresh Mint Tip

Add mint after the peaches release juice so the leaves stay green instead of turning limp.
