Mint Cardamom Kulfi Pops

Dense, creamy frozen pops flavored with fresh mint, cardamom, and pistachios.

Ingredients

  • 2 cups whole milk
  • 1 cup evaporated milk
  • 1/2 cup sweetened condensed milk
  • 3/4 cup fresh mint leaves
  • 6 cardamom pods, crushed
  • 1/3 cup finely chopped pistachios
  • Pinch of salt
  • 1 teaspoon rose water, optional

Method

  1. Simmer whole milk until reduced by about one quarter.
  2. Stir in evaporated milk, condensed milk, cardamom, and salt.
  3. Remove from heat, add mint, cover, and steep 15 minutes.
  4. Strain, stir in pistachios and rose water if using.
  5. Pour into pop molds and freeze until solid.

Fresh Mint Tip

Crush cardamom pods before steeping, but leave mint leaves whole so both strain out cleanly.
