Mint Lime Cheesecake Bars

Fresh mint rubbed into sugar perfumes lime cheesecake bars without turning them candy-like.

Ingredients

  • 1 1/2 cups graham crumbs
  • 5 tablespoons melted butter
  • 1/2 cup fresh mint leaves
  • 3/4 cup sugar
  • 16 ounces cream cheese
  • 2 eggs
  • 1/3 cup sour cream
  • Zest and juice of 2 limes
  • 1 teaspoon vanilla
  • Pinch of salt

Method

  1. Heat oven to 325 F and line an 8-inch pan.
  2. Mix graham crumbs with butter and press into the pan.
  3. Rub mint leaves into sugar until fragrant, then remove large leaf pieces.
  4. Beat cream cheese with mint sugar, eggs, sour cream, lime zest, lime juice, vanilla, and salt.
  5. Pour over crust, bake until just set, chill, and cut into bars.

Fresh Mint Tip

Use dry mint leaves for rubbing into sugar; wet leaves clump and make the filling streaky.
