Mint Poached Peaches with Yogurt

Tender peaches soak in a light mint syrup, then meet tangy yogurt and crunchy pistachios.

Ingredients

  • 4 ripe but firm peaches, halved
  • 2 cups water
  • 1/2 cup sugar
  • 1 cup fresh mint leaves
  • 2 strips lemon peel
  • 1 tablespoon lemon juice
  • 1 1/2 cups Greek yogurt
  • 1/4 cup pistachios
  • Honey, for serving

Method

  1. Simmer water, sugar, mint, and lemon peel for 5 minutes.
  2. Add peach halves and poach gently until just tender.
  3. Transfer peaches to a bowl and strain syrup over them.
  4. Cool to room temperature, then chill if desired.
  5. Serve with yogurt, pistachios, honey, and a spoonful of mint syrup.

Choose peaches that are ripe but still firm so they hold shape in the mint syrup.
