Mint Pomegranate Yogurt Panna Cotta

Creamy yogurt panna cotta meets pomegranate, orange, and fresh mint for a bright finish.

Ingredients

  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 teaspoons gelatin
  • 3 tablespoons cold water
  • 2 cups Greek yogurt
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 1/2 cups pomegranate arils
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • 1/3 cup torn fresh mint

Method

  1. Bloom gelatin in cold water.
  2. Warm cream, sugar, and salt until steaming, then whisk in gelatin.
  3. Cool slightly and whisk into yogurt with vanilla.
  4. Pour into cups and chill until set.
  5. Toss pomegranate with orange juice, zest, and mint, then spoon over the panna cotta.

Fresh Mint Tip

Tear mint into the pomegranate topping right before spooning it over the set cream.
