Minted Nectarine Pavlovas

Crisp meringue nests hold cream and juicy nectarines tossed with lime and torn mint.

Ingredients

  • 4 egg whites
  • 1 cup sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 3 nectarines, sliced
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/3 cup torn fresh mint
  • Pinch of salt

Method

  1. Heat oven to 275 F and line a baking sheet.
  2. Beat egg whites and salt to soft peaks, gradually add sugar, then beat glossy.
  3. Fold in cornstarch and vinegar, shape into 6 nests, and bake until crisp outside.
  4. Whip cream and spoon into cooled pavlovas.
  5. Toss nectarines with lime and mint, then pile over the cream.

Dress the nectarines right before serving so the mint stays perky against the crisp meringue.
