Orange Mint Polenta Cake

A sunny cornmeal cake with olive oil, orange, and a fresh mint citrus salad spooned over each slice.

Ingredients

  • 1 cup fine cornmeal
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup olive oil
  • Zest and juice of 2 oranges
  • 2 oranges, segmented
  • 1/3 cup torn fresh mint
  • 2 tablespoons honey

Method

  1. Heat oven to 350 F and line a 9-inch cake pan.
  2. Whisk cornmeal, almond flour, baking powder, and salt.
  3. Beat eggs and sugar, then whisk in olive oil, orange zest, and orange juice.
  4. Fold in dry ingredients and bake until golden, 35 to 40 minutes.
  5. Toss orange segments with honey and mint and spoon over slices.

Fresh Mint Tip

Tear mint into the citrus salad right before serving so it perfumes the orange juices.
