Peach Tomato Mint Granita

Ripe peaches and sweet tomato make a rosy, savory-leaning granita sharpened with fresh mint.

Ingredients

  • 4 ripe peaches, peeled and chopped
  • 1 large ripe tomato, seeded and chopped
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup fresh mint leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt

Method

  1. Simmer sugar and water until dissolved, then cool.
  2. Blend peaches, tomato, syrup, mint, lemon juice, lemon zest, and salt until smooth.
  3. Strain if you want a finer texture.
  4. Freeze in a shallow pan, scraping every 30 minutes.
  5. Serve in chilled bowls with small mint leaves.

Fresh Mint Tip

Choose a very sweet tomato; underripe tomato can make the mint taste harsh.
