Pear Mint Almond Crisp

Juicy pears bake under a nutty almond topping, then fresh mint slips into the warm fruit juices.

Ingredients

  • 6 ripe pears, sliced
  • 1/3 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon cornstarch
  • 1 cup rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup flour
  • 6 tablespoons melted butter
  • 1/2 teaspoon cinnamon
  • 1/3 cup chopped fresh mint

Method

  1. Heat oven to 375 F.
  2. Toss pears with brown sugar, lemon juice, lemon zest, and cornstarch in a baking dish.
  3. Mix oats, almonds, flour, cinnamon, and melted butter until clumpy.
  4. Scatter topping over pears and bake until bubbling, 35 to 40 minutes.
  5. Rest 10 minutes, then gently fold mint into the exposed pear juices.
