Pistachio Mint Baklava Cups

Crisp phyllo cups hold pistachios and honey syrup scented with lemon and fresh mint.

Ingredients

  • 24 mini phyllo shells
  • 1 1/2 cups pistachios, finely chopped
  • 3 tablespoons melted butter
  • 1/3 cup honey
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup fresh mint leaves
  • Pinch of salt

Method

  1. Heat oven to 350 F and place phyllo shells on a sheet pan.
  2. Mix pistachios with melted butter and salt, then spoon into shells.
  3. Bake until crisp and fragrant, 8 to 10 minutes.
  4. Simmer honey, water, lemon juice, and lemon zest for 2 minutes.
  5. Steep mint in the syrup for 8 minutes, strain, and spoon over the warm cups.
