Plum Mint Upside-Down Cake

Tart plums bake into brown sugar caramel, then fresh mint brightens the glossy top.

Ingredients

  • 5 plums, sliced
  • 1/2 cup brown sugar
  • 8 tablespoons butter, divided
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup sugar
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla
  • 1/4 cup small fresh mint leaves

Method

  1. Heat oven to 350 F and butter a 9-inch cake pan.
  2. Melt 3 tablespoons butter with brown sugar and spread in the pan; arrange plums over it.
  3. Whisk flour, baking powder, and salt.
  4. Beat remaining butter with sugar, eggs, yogurt, and vanilla, then fold in dry ingredients.
  5. Bake over the plums until set, invert while warm, and press mint leaves lightly into the glossy fruit.

Fresh Mint Tip

Wait 5 minutes after unmolding before adding mint so the leaves perfume the caramel without wilting completely.
