Raspberry Mint Vinegar Sorbet

Raspberries, fresh mint, and a small splash of vinegar churn into a sharp, refreshing sorbet.

Ingredients

  • 4 cups raspberries
  • 2/3 cup sugar
  • 1/2 cup water
  • 1 cup fresh mint leaves
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • Pinch of salt

Method

  1. Simmer sugar and water until dissolved, then steep mint for 15 minutes.
  2. Strain the syrup and cool.
  3. Blend raspberries with syrup, vinegar, lemon juice, and salt.
  4. Strain out seeds if desired and chill well.
  5. Churn in an ice cream maker and freeze until scoopable.

Fresh Mint Tip

Use just enough vinegar to sharpen the berries; too much will make the mint taste thin.
