Roasted Banana Mint Caramel Sundaes

Roasted bananas and warm caramel get a fresh mint finish over vanilla ice cream and peanuts.

Ingredients

  • 4 ripe bananas, halved lengthwise
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • Pinch of salt
  • 1/2 cup caramel sauce
  • 1/3 cup chopped fresh mint
  • Vanilla ice cream
  • 1/3 cup roasted salted peanuts
  • Dark chocolate shavings

Method

  1. Heat oven to 425 F.
  2. Arrange bananas in a baking dish with butter, brown sugar, and salt.
  3. Roast until glossy and soft, 10 to 12 minutes.
  4. Warm caramel gently, remove from heat, and stir in chopped mint.
  5. Serve bananas over ice cream with mint caramel, peanuts, and chocolate.
