Strawberry Mint Panna Cotta

Silky cream gently steeped with mint, set softly, and topped with lemony strawberries.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1 cup fresh mint leaves
  • 2 1/2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • 1 teaspoon vanilla
  • 2 cups diced strawberries
  • 1 tablespoon lemon juice
  • Pinch of salt

Method

  1. Sprinkle gelatin over cold water and let bloom.
  2. Warm cream, milk, sugar, salt, and mint until steaming; cover and steep 20 minutes.
  3. Strain out mint, whisk in gelatin and vanilla, and pour into cups.
  4. Chill until set, at least 4 hours.
  5. Toss strawberries with lemon juice and spoon over the panna cotta.

Fresh Mint Tip

Do not boil the mint cream; gentle steam preserves the soft herbal flavor.
