- 6 cups cubed seedless watermelon
- 1/3 cup sugar
- 1/2 cup fresh mint leaves
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1/4 teaspoon fine salt
- Extra mint, for serving

Dessert
Watermelon freezes into rosy flakes with lime, fresh mint, and enough salt to sharpen the fruit.
Use less sugar if the watermelon is very ripe; mint tastes clearer when the granita is not too sweet.
