Watermelon Mint Lime Granita

Watermelon freezes into rosy flakes with lime, fresh mint, and enough salt to sharpen the fruit.

Ingredients

  • 6 cups cubed seedless watermelon
  • 1/3 cup sugar
  • 1/2 cup fresh mint leaves
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon fine salt
  • Extra mint, for serving

Method

  1. Blend watermelon, sugar, mint, lime juice, lime zest, and salt until smooth.
  2. Strain if you want a finer texture.
  3. Pour into a shallow pan and freeze 45 minutes.
  4. Scrape with a fork, then repeat freezing and scraping until fluffy.
  5. Serve in chilled glasses with small mint leaves.

Fresh Mint Tip

Use less sugar if the watermelon is very ripe; mint tastes clearer when the granita is not too sweet.
